Drying of fenugreek leaves by cabinet solar dryer and
open sun

Abstract: A cabinet solar dryer has
been fabricated for drying of leafy vegetable such as
fenugreek leaves. In this paper an attempt has been made
to evaluate the performance of cabinet solar dryer (CSD)
and open sun drying (OSD) for the drying of fenugreek
leaves. The sample of one kg fresh leaves of fenugreek
vegetable was dried in cabinet solar dryer and in open
sun. The temperature in cabinet solar dryer was found
more than the surrounding temperature. The study also
showed that the drying rate of cabinet solar dryer was
faster than the open sun. After drying, samples were
powdered and nutritive tests were carried out in the
national agricultural and Food research institute
(NAFRI) pune. The result showed nutrient like Protein
and Fat was found 18.18%, 11% more in CSD dried sample
than OSD.
